Icelandic fishermen have been supplying cod to Europe for generations and Bon Food has been importing Icelandic Cod and Ling to Australia for decades. Bon Food’s Fish products carry the blue MSC (Marine Stewardship Council) label which reflect sustainable certification. Companies using the label through the supply chain have been assessed to ensure products can be traced back to an MSC certified fishery.
Although cod does not contain the high amounts of omega-3 fatty acids found in fatty fish, it is relatively low in mercury and can be a nutritious part of a healthy diet. When cooked, the flavour is mild but distinct and the texture is moderately firm. Cod is a versatile fish that is great pan-fried or baked.
Ling is one of more than 30 cod-like fish species that are caught in the waters around Iceland. A large part of the Ling caught by Icelandic boats is salted and exported. In Australia, it is used similarly to cod for Baccala, as the two fish are very close in taste and texture. In Australia both Icelandic Cod and Ling are popular during Christmas and Easter and are perfect for family gatherings.
